Cashew Crusted Halibut

Yields 10 fillets

  • 1 ¼ cups all purpose flour
  • 2 ½ cups unsalted cashews
  • Halibut fillets
  • Salt and pepper
  • 1 ¼ cups buttermilk

To create the seasoned cashew crust combine flour and cashews in a food processor and blend until consistency of cornmeal.

Season the halibut fillets with salt and pepper. Place the crust mixture in a shallow dish, pour the buttermilk in a bowl, and dip fillets into buttermilk, draining of the excess. Cover in the crust mixture to coat evenly. Place all the coated halibut fillets on a lined (with foil, cooking mat or parchment paper) baking tray. Bake at 400 degrees until the crust is golden brown, about 15 to 20 minutes.
